Make no mistake, this wine is dry and crisp in the finish but it tastes like a bowl full of fruit along the way, really.
Technically? We make the wine by blending fruit as it goes into the press after de-stemming. We allow everything to macerate cold overnight (about 8 hours) and then press ever-so-gently, making sure we do not extract too much tannin from any uninvited rough seeds in our gently de-stemmed fruit. We end up with a delicately colored wine (PINK!) full of vibrancy and relatively high acid. Rob says it makes him think of ‘walking into a cherry and plum orchard in full bloom, sunny morning, dew still on the grass.
